Working and cooking can be quite a task. That too, packing a lunch is the worst!!! because by thinking what to make everyday, it is really bugging. When I started working, I used to go crazy thinking what to cook for lunch. Then I landed up making a variety of mixed rice recipes that are really yummy and good for health too.
This particular recipe is one of my favorites in my lunch box menu.Firstly, its very easy and takes less time at the same time its tasty too!!!

This particular recipe is one of my favorites in my lunch box menu.Firstly, its very easy and takes less time at the same time its tasty too!!!
You will need:
- Cloves - 2 pods
- Bay Leaf - 1
- Rice - 1 1/2 cups
- Cauliflower - 1 cup
- Potato - 1 cup
- Onion - finely
- Jeera Powder (Cumin Powder) - 1 tsp
- Garam Masala - 1 tsp
- Salt - to taste
- Chilli Powder - 1 tsp
- Dry Ginger Powder - 1/2 tsp
- Coriander Leaves/ Mint - Finely chopped
- Water - 4 cups
How to go about it:
- Wash ant cut the veggies ready.
- If you are using Basmati Rice, then wash the rice and slightly fry on oil and keep aside. Incase of normal rice, you need not do this.
- Add oil in a pressure or Electric Rice Cooker, once it is hot add cloves and bay leaf.
- Add Onion and fry until pink and add potatoes and cauliflower and stir for about 5 - 10 mins.
- Now, add jeera powder, salt, chilli powder and dry ginger powder and stir.
- Add the rice and water and let it cook fully. In case or a pressure cooker, then let it cook until 2 or 3 whistles.
- Once this is done, add the garam masala and mint/ coriander leaves and serve hot with raita.
