My mango mania continues.............. and this time in the form of Mango Sambar. I love this sambar and my mother makes it so well...yummm... I miss her cooking soooo much!!!!

What you need:
- Raw Mango - 2 cut into quarters
- Toor dal - 1/2 cup
- Tamarind - small ball size
- Sambar powder - according to taste
To Grind:
- Coconut - grated 1/2 tsp
- Channa dal - 1 tsp
- Dhaniya - 2 tsp
Light roast all the above in little oil and grind with 1/2 tsp water to form a paste.
Garnishing:
- Soak tamarind in warm water and take the pul out.
- Boil the toor dal and keep aside.
- In a pan, add oil. Add the cut raw mangoes and stir for a few seconds.
- Add the tamarind water, salt and sambar powder.
- Let the mangoes cook until they are soft.
- Add the ground paste and let the sambar cook for a few mins and take off from the stove.
- Now, add oil to a small fry pan, splutter mustard seeds and curry leaves. Add the onions and fry them until brown and add this to the sambar.
- Serve hot with rice.
