My grand mother in law is a Konkani. She makes excellent food. So this is one of her delicacies from the Konkan Express.
Surnoli is a sweet dosa made with jaggery. It has a savory variety also. Usually made for breakfast at our house. So now I'm on my break and I get to enjoy all lovely items from my in laws.
What you need:
- Rice - 3 cups
- Poha/ Aval - 2 cups
- Grated Coconut - 1 shell
- Jaggery - to taste
- Salt - a pinch
How to go about it:
- Soak rice and poha/ puffed rice separately for about 5 hours.
- Grind puffed rice/ poha with grated coconut smoothly with very little water. Grind rice with little salt smoothly with very little water.
- Mix jaggery to this batter and let it rest for a night.
- Next day, on a hot griddle spread the batter and make dosas.
