Summer is here and the body yearns for something to cool down. Cucumber and Yoghurt both have cooling effects on the body. So thought of combining together for a cold soup.
This soup is rather very simple and uses just 2 main ingredients. Viola its done. But the flavour is very refreshing.

What you need:
- Cucumber - 1 (peeled, de seeded and cut into big chunks)
- Yoghurt - 1 cup
- Salt to taste
- Olive Oil - 1 tsp (to drizzle)
- Coriander Leaves - 1 tbsp (finely chopped)
- Pepper Powder - to taste
- Add the chunks of cucumber and yoghurt to a mixer and grind to a smoothie texture.
- Now add salt and pepper.
- Add the chopped coriander and adjust the consistency of the soup to your preference.
- Refrigerate at least for 2 hours before serving. While serving drizzle with a little olive oil.
