Pudina (Mint) Corn Rice - Lunch Box Special

Deciding what to make for lunch is a big task!!! it should not be repetitive and it should be interesting and tasty...

uffff..... so now this morning I landed up on this particular rice.... very easy n amazingly fast and tasty too.. the aroma of pudina (mint) just makes you go vah vah!!! what eh intoxicating smell....

You will need:

  • Pudina (mint) leaves - 3/4 cup
  • Green Chillies - 2
  • Corn kernels - 3/4 cup
  • Onion - 3/4 cup finely chopped
  • Oil
  • Salt  - to taste
  • Rice - 1 cup

How to go about it:
  • Grind the pudina and green chillies together with little water, to a fine paste and keep aside.
  • In a pressure cooker or electric cooker, add oil. Once hot, add the onion and fry until soft. 
  • Add the corn kernels and fry for a few mins.
  • Now add the salt.
  • Wash the rice, add to the fried mixture.
  • Add water and cook.
  • Serve with raita.
