Cheese Coriander Garlic Pull apart Rolls

Baking is addictive!! Period. Its the time when I bake I just enjoy myself the most. It is the aroma and the technique that I love about baking. These pull apart rolls were in my to do list for a long time and today I finally took it from my favourites list to my oven.

A cup of soup with these rolls is all I relished alone in my lunch. These were soft, cheesy and the smell of garlic with butter was heavenly.

Every nook and corner of my house was filled with the aroma that I went crazy and could not wait longer to bite into them.

I took the recipe from Padhu's Kitchen. Her recipe was just superb Easy to understand and was very very tasty. Unlike her recipe I got 9 rolls instead of 4 rolls as mentioned by her.

Preparation Time: 20 minutes (excluding the resting time)
Cooking Time: 20 - 25 minutes
Yields: 9 rolls
Recipe Source: www.padhuskitchen.com

What would you need:

For the bread:

  1. All purpose flour - 1 1/2 cups
  2. Luke warm water - 1/2 cup
  3. Instant yeast - 1/2 tbsp
  4. Sugar - 1 tbsp
  5. Salt - 1/2 tsp
  6. Oil - 1 1/2 tbsp (I used Olive Oil. You could use any refined oil. Please avoid mustard/ coconut/ gingelly oil)
  7. Cheese - 1/2 cup (grated)
Garlic Coriander Spread:
  1. Butter - 1/2 cup
  2. Coriander - a bunch (finely chopped)
  3. Garlic - 4 pods (grated)
How to go about it:

Proofing the yeast:
  1. Take half cup of water. Add 1/4 tsp sugar and sprinkle the yeast. Give it a good mix and keep it in a dark place (oven or a dark corner of your house) for about 10 minutes.
  2. The yeast would bloom and bubble up rapidly. Keep this ready.

Garlic Coriander Spread:
  1. Beat the butter, coriander and garlic together and keep aside.
The dough:

  1. In a bowl, add the flour, salt, sugar and mix.
  2. Slowly add the yeast water to the flour and start bringing it together. As you start mixing the dough will come together.
  3. Add the oil in parts until you get a smooth, non - sticky dough. When you put your finger inside the dough, it will bounce back to its original shape. This says the dough is ready.
  4. Place the dough in a bowl and cover. Keep this for 45 - 50 minutes for the first rise.
  5. After the first rise, the dough would have doubled in its size. Punch the air out of the dough and roll it out on your working surface (into a rectangle).
  6. Spread the butter spread evenly and sprinkle the grated cheese on top of it.
  7. Now roll this set up and cut about 8 - 9 rolls out of this.
  8. Arrange them on a greased & dusted baking dish.
  9. Again cover the dish and let it rest for another 20 minutes.
  10. In the last 10 minutes of the resting period, pre - heat the oven at 200 degress Celsius for 10 minutes.
  11. Once the oven is pre heated, set the temperature to 180 degree celsius and bake the rolls for about 20 - 25 minutes or until the top of the rolls are nice and brown.

Home made Burger Buns

Burger is one of my most favourites junk food!!! A big slosh of ketchup, a slice of cheese and crispy crunchy filling with a big can of cola....  Burrrrppp!!! It is all I need for a weekend dinner.

Burger Buns are soft, bouncy and should stay kaput when you bite into it. This was my first try and these came out perfect!!!

Preparation Time: 10 minutes
Standing Time: 1 hour 30 minutes
Makes: 4 buns
Cooking Time: 25 minutes
Source: Gayathri's Cookspot

What would you need:
  1. Butter - 1 tbsp
  2. Curd - 1/4 cup + a pinch of Baking Soda (this serves as the egg substitute)
  3. Flour - 1  3/4 cup
  4. Sugar - 1/8 cup
  5. Luke Warm Water - 1/3 - 1/2 cup
  6. Salt - 3/4 tsp
  7. Instant Yeast - 1/2tbsp
How to go about it:
  • In a bowl add flour, salt, sugar, butter, curd baking powder mixture and yeast.
  • Add water little by little to knead a soft and slightly sticky dough. You may not use the 1/2 cup of water, so start from 1/4 cup and add tablespoons of water as you knead. Stop when the dough consistency is achieved.
  • Knead the dough for 10 minutes to make it soft, silky and pliable. This helps the gluten to develop in the dough.
  • Place the dough in a clean bowl and keep it covered for 1 hour or until doubled.
  • When the dough has doubled in volume, transfer it to counter and punch it down.
  • Divide the dough into 4 equal parts.
  • Roll each ball by cupping it inside the palm and rolling it in circles until you get a smooth finish.
  • Place the balls on a greased baking tray with enough space for the next rise.
  • Flatten each ball and cover it again with a towel for another 30 minutes or until the dough has doubled.
  • Pre - heat the oven at 200 C for 10 minutes.
  • When the dough has doubled, brush the top with milk and sprinkle sesame seeds.
  • Now, place the tray in the oven and bake for about 15 - 25 minutes or until the top of the bun has turned golden brown. Once the buns are done, brush the top of the buns with some butter.
  • Make burgers and enjoy...
Points to remember:
  • If you are using Active Dry Yeast - use the same quantity as that of the Instant Yeast.
  • If using an OTG place the baking tray in the centre rack while baking.
  • Half way through baking, rotate the tray so that the heating is even.
  • If you are using a convection oven, you can skip the step of rotating the sides of the tray.
