Cucumber Buttermilk Cold Soup

Summer is here and the body yearns for something to cool down. Cucumber and Yoghurt both have cooling effects on the body. So thought of combining together for a cold soup.

This soup is rather very simple and uses just 2 main ingredients. Viola its done. But the  flavour is very refreshing.

Let's get on with the recipe....

What you need:

  1. Cucumber - 1 (peeled, de seeded and cut into big chunks)
  2. Yoghurt - 1 cup
  3. Salt to taste 
  4. Olive Oil - 1 tsp (to drizzle)
  5. Coriander Leaves - 1 tbsp (finely chopped)
  6. Pepper Powder - to taste 
How to go about it:
  1. Add the chunks of cucumber and yoghurt to a mixer and grind to a smoothie texture.
  2. Now add salt and pepper. 
  3. Add the chopped coriander and adjust the consistency of the soup to your preference. 
  4. Refrigerate at least for 2 hours before serving. While serving drizzle with a little olive oil.
