Raw Mango Sambar

My mango mania continues.............. and this time in the form of Mango Sambar. I love this sambar and my mother makes it so well...yummm... I miss her cooking soooo much!!!!

This time I'am making it my way... a little different.

What you need:

  1. Raw Mango - 2 cut into quarters
  2. Toor dal - 1/2 cup
  3. Tamarind - small ball size
  4. Sambar powder - according to taste
To Grind:
  1. Coconut - grated 1/2 tsp
  2. Channa dal - 1 tsp
  3. Dhaniya - 2 tsp
Light roast all the above in little oil and grind with 1/2 tsp water to form a paste.

Garnishing:
  1. Mustard seeds - 1/4 tsp
  2. Curry leaves
  3. Onioin - finely chopped 1 tbsp

How to go about it:
  1. Soak tamarind in warm water and take the pul out.
  2. Boil the toor dal and keep aside.
  3. In a pan, add oil. Add the cut raw mangoes and stir for a few seconds. 
  4. Add the tamarind water, salt and sambar powder.
  5. Let the mangoes cook until they are soft.
  6. Add the ground paste and let the sambar cook for a few mins and take off from the stove.
  7. Now, add oil to a small fry pan, splutter mustard seeds and curry leaves. Add the onions and fry them until brown and add this to the sambar.
  8. Serve hot with rice.
